Friday Five: Favorite Summer Fruits & Veggies

First things first, Happy Memorial Day weekend!! I hope you all take a moment to honor those who have sacrificed their lives for our freedom. Over this weekend we also tend to celebrate the unofficial start of summer. And let’s face it – there will be FOOD involved. I love this week’s theme because as it heats up I crave fruits and veggies  – positively crave! 1. Sugar. Snap. Peas. That is all. 

2. All the peppers. Stuffed, sauteed, or sliced with hummus as dip, green, red, orange, yellow. I love me some peppers! Most of all I love to start with these and then combine as many veggies as possible in a saute pan with a little sesame oil and cayenne pepper. 3. Corn on the Cob. I may or may not have had this for dinner one night this week. Only this. 😉 Cornonthecob

4. Pineapple. Can we talk about grilling these bad boys?

5. Strawberries. I gave you my ode to strawberries in my spring foods Friday Five but I love strawberries just as much in the summer. They are the one continuous staple in my kitchen. I’ve had about 3 mixed greens salads this week with no other accompaniments but strawberries, sunflower seeds and dried cranberries! strawberriesgreens marontherun.com

  1. There’s a little place in Manhattan called Cafe Habana that serves grilled corn on the cob with cayenne pepper, parmesan cheese and butter. It’s heavenly.

  2. corn on the cob!!! I bought some last week but still haven’t cooked it yet because I had a root canal and my tooth is still giving me problems :/ it needs to stop being sore so I can eat corn!

  3. YUM on all! One thing I love in the summer is Corn on the Cob and I love to have it smoked on a BBQ or smoked in milk cans:) There is a corn farm not to far from me and in the summer this is how it’s cooked.. Now I just wish it was July and corn time:)

    Peppers give me the worst gas, but I love everything else! BTW- joined the pool this week…night laps here I come!

  5. Oh my gosh, my FAVORITE salads have strawberries in them. (Or really, any berry). Yes to all of these. I got Indian style stuffed peppers in my Hello Fresh box a few weeks ago and they were amazing. I’m happy to send the recipe your way!

    I have a Memorial Day race on Monday in Olney. 1st time running it and looking forward to it.
